Banana and coconut muffins

These muffins are one of the best ways to use up those banans which have gone a bit brown sitting in the fruit bowl. They are a great breakfast on the run or afternoon treat. They can also be frozen which means you wont eat them all in a couple of days.

3 bananas ( the softer the better)
3/4 cup sugar
1 egg
1/3 cup melted butter
2 teaspoons baking powder
1&1/4 wholemeal flour
1/4 cup oats
1/4 dessicated coconut
1 teaspoon vanilla essence
1 teaspoon cinnamon powder

Topping ( optional)
1/4 cup oats
1/4 cup dessicated coconut
1/4 brown sugar
1 teaspoon cinnamon

1. Mash bananas.
2. Add sugar and slightly beaten egg.
3. Add melted butter.
4. Add the dry ingredients
5. Pour batter into 12 hole muffin tin
6. Mix all topping ingredients together
7. Sprinkle over the top of the muffins
8. Bake at 180 degrees for 20 minutes.
