Bruchetta for 1

Bruchetta is such an iconic italian dish but it is actually a very easy dish to make. This is perfect for a light lunch or as an accompaniment to dinner. It is also a very easy recipe to multiple and make for a group of people

Ingredients

2 slice of sourdough bread
1 large tomato ( handful of cherry tomatoes would also be good)
couple of basil leaves chopped finely
1 table spoon olive oil
salt
pepper
1 teaspoon minced garlic
1 tablespoon balsamic

Possible Additions
feta
bocconcini
red onion
pesto

Method:
1. Toast the sourdough
2. Cut up the tomatoes into small pieces
3. In a bowl combine the tomatoes, basil, olive oil, balsamic, salt and pepper
4. Spoon generously onto the toasted bread
Enjoy!

Feel free to experiment and add to the tomato mix. A personal favourite of mine is to add a bit of feta to the mix
