Thai Salmon Bowls

Salmon is one of those foods which is so good for you but it can seem a bit complicated to cook. This dish has an easy thai inspired glaze to add lots of flavour with the punch. Overall this dish takes around 20 mins to make so it is a quick and delicious way to enjoy salmon.

2 salmon fillets
1 teaspoon chilli
1 table spoon honey
1 tablespoon lime juice

Wild rice/ Brown rice ( I used Uncle Ben’s Brown/ Wild Rice medley but you can easily cook your own brown rice)
1/2 Cucumber
1/4 Red cabbage
1 Carrot

1. In a small bowl mix the chilli, honey and lime juice
2. Brush over the salmon fillets
3. Cook in an oven at 180 for 15 mins
4. Thinly slice the carrot, cucumber and red cabbage
5. Cook for 90 seconds in the microwave
6. Assemble the rice vegetables and salmon in a bowl and top with peanuts
