Thai Beef Salad

This Thai beef salad is perfect for hot summer evenings where you don’t want to spend ages in the kitchen but still want a filling meal. The herbs, chilli and lime make this a flavourful salad. This recipe serves 2 people but can easily double ingredients to serve more.

Ingredients
200 g beef steaks
1 tablespoon oil
1 Lebanese cucumber
50 G mescalin lettuce
handful of cherry tomatoes halved
1/4 red onion, thinly sliced
3 sprigs coriander
3 sprigs mint
1/2 red capsicum
30 ml sweet chilli sauce
1 tablespoon lime juice
1 tablespoon crushed garlic

Method
1. Preheat fry pan, Brush steaks with 2 teaspoons of oil. Cook for 4 minutes each side then set aside for 5 minutes
2. Using a vegetable peel, peel the cucumbers lengthways into ribbons
3. Cut capsicum into thin slices
4. In a large bowl mix lettuce with herbs, cucumbers, onions, tomatoes and capsicum
5. Slice beef and mix with chilli sauce, lime juice and garlic
6. Combine meat with salad
