Chicken sausage rolls

These rolls are perfect for picnics, lunches and quick snacks. They are packed with flavour and can be frozen to eat at a later date. I find these to be much lighter than sausage rolls.


Chicken mince 1 packet 250 g

3/4 cup breadcrumbs

1 egg

1 small carrot

1 small zucchini

1 tablespoon minced garlic

a small handful of herbs ( basil and parsley)

salt and pepper

2 sheet puff pastry

extra egg to brush pastry


  1. Preheat oven to 180C
  2. Set puff pastry on bench to thaw
  3. Grate carrot and zucchini
  4. Chop herbs roughly
  5. In a bowl add all ingredients and season with salt and pepper
  6. Using your hands put half the mixture into a log about 1/3 in from the edge of the puff pastry ( make sure it is even all the way to the ends)
  7. Roll the pastry so you have one sausage roll.
  8. Place seam down on a lined baking tray and cut into 4 pieces
  9. Brush each roll with the egg wash
  10. Cook for 40 mins
  11.  Enjoy or  freeze for up to 1 month
