Vietnamese Pork Meatball soup

This soup is so lovely and fragrant. It is light enough to be enjoyed in summer but still keeps you warm in winter. Jam-packed with flavours from Vietnam, this recipe is also a great way to use up any leftover coriander or spring onion that is looking a bit sad in your fridge

Ingredient

Meatballs

250 g pork mince

1 egg

1/3 cup breadcrumbs

a handful of coriander chopped

2 spring onions finely sliced

1 tablespoon garlic

1 teaspoon ginger

1 teaspoon chilli

Broth

1 stalk lemon grass finely chopped

handful coriander chopped

2 spring onions finely sliced

1 tablespoon garlic

1 teaspoon ginger

1 teaspoon chilli

2 tablespoons soy sauce

1 tablespoon fish sauce

2 cups vegetable stock

3 cups boiling water

1 packe of vermicelli rice noodle

2 carrots thinly sliced

Method

  1. In a food processor mix all the meatball ingredient
  2. Make small meatballs and cook in a pan with 2 tablespoons of oil until brown and cooked all the way through
  3. In another pan add 1 tablespoon of oil, coriander, lemongrass, spring onions, chilli, ginger, garlic over low heat
  4. Cook until soft and flavours are released
  5. Add soy and fish sauce and then water and stock
  6. Add carrot and noodles and bring to a medium heat
  7. Add cooked meatballs
  8. Serve in bowls
