Iced Coffee Brownie TimTams

So Tim-Tams are pretty much the best food ever closely followed by Messina Gelato and now they have released their second collaboration into store, we know that it will be amazing. The flavours they have released are Iced Coffee, Turkish Delight and Choc Cherry Coconut. I decided to create a baked version of these new treats. The Iced Coffee is personally my favourite and so I replaced the traditional biscuit with brownie. These are delicious and I hope you enjoy the recipe as much as I did




250g butter

2 cups of sugar

4 eggs

1 tablespoon vanilla essence

1 1/2 cup self-raising flour

3/4 cup cocoa powder

3 tablespoons instant coffee dissolved in 1/4  cup  boiling water


125 g softened butter

1/2 milo

2 cups icing sugar

1 block of cadbury dairy milk


  1. Melt the butter in a large saucepan then remove from heat
  2. Add sugar and vanilla and mix until combined
  3. Add eggs one at a time ensuring they are fully mixed in
  4. Add the flour , cocoa and half of the coffee and mix
  5. Pour half the mixture into a prepared pan ( you want to create a very thin brownie). I used a ^ by 10 inch pan
  6. Cook for 30-35 minutes
  7. Cool and remove before repeating steps 5-6 for the second brownie
  8. Let both brownies cool – Sometimes it is easier to let them cool overnight
  9. For the icing mix all ingredients in a clean mixing bowl
  10. You want to cut both brownies into tim tam measurement. I aimed for 1 inch by 2 inches but honestly whatever size will work. You just want to try and have an even number of brownies by the end
  11. Use the icing to sandwich two brownies together
  12. Leave to set for around 2 hours
  13. Melt the chocolate and then dunk each pair and leave to drip on a wire rack
