Hawaiian Pork

This is a beautifully sweet and sour mid-week dinner. You don’t have to serve it in the pineapple but I just thought it looked cool. Similarly, if pineapples are not in season, frozen pineapple works just as well.

 

Ingredients

  • 500g pork
  • 1 tablespoon butter
  • 1 onion sliced
  • 1 carrot
  • 1/2 capsicum
  • 1 small pineapple 1/2 large pineapple or 2 cups frozen pineapple
  • 50 ml teriyaki sauce
  • 50ml soy sauce
  • 1 teaspoon ginger
  • 2 teaspoons brown sugar
  • green beans
  • brown rice

 

Method

  1. Chop up pork into small bite size pieces
  2. Melt butter in pan and then add pork and onion
  3. In a small jug, mix teriyaki sauce, soy sauce, ginger, and brown sugar
  4. Once pork is cooked add sauce and chopped pineapple to the pan and turn to high heat
  5. Fill another pan with water and add brown rice, cook on high for 25 minutes
  6. Cook the pork until the sauce reduces and becomes thick
  7. Add carrots and capsicum and stir through
  8. Steam beans for 2 minutes
  9. Drain rice and then serve with pork and beans
