Pesto Pasta

This was my favourite meal as a child and I love using the pesto ( without the pasta) in a variety of other recipes. Buying a small basil plant is a great way to have a constant supply of basil that replenishes but buying a packet is ok as well. You can also freeze the pesto in an ice cube tray to use later.

Ingredients

  • 250 grams basil
  • 50 g parmesan
  • 2 tablespoons minced garlic
  • 1/4 cup pine nuts
  • 100 ml olive oil
  • cooked pasta of choice

Method

  1. In a food processor blend basil, parmesan, garlic and pine nuts until well combined
  2. Scrape down the sides and then add oil and blend until well combined
  3. Serve with pasta of choice
