Chia seeds are an amazing source of protein and good fats and also make for an easy grab and go breakfast. I prepare my chia pudding the night before and let it sit in the fridge overnight to allow the seeds to absorb the moisture. I find them to be quite filling so I don’t need lots. On a busy morning, I just grab the small Tupperware with the pudding and I can eat it on the go whilst still having a filling and healthy breakfast.
- 3 tablespoons chia seeds
- Frozen raspberries
- 150ml yoghurt ( I like to use the Chobani tubs as you can add extra flavours to the pudding)
- 1/2 peach sliced or any other fruit
- Mix together yoghurt, chia seeds and raspberries in a small Tupperware container
- Leave in the fridge overnight
- Top with peach and fruit
