Rice Paper Rolls

Healthy, light and full of flavour these rice paper rolls are perfect to take to work or for those lunches or dinners when you don’t want anything too heavy. They use up any leftover chicken and vegetables plus if you don’t use all the rice paper they last forever in the cupboard.


  • rotisserie chicken or leftover chicken breast
  • 1 carrot grated
  • 150g vermicelli rice noodles cooked
  • 1/2 cucumber chopped
  • handful mint leaves chopped
  • handful coriander leaves chopped
  • 1/4 red capsicum sliced
  • 1/8 red cabbage thinly sliced
  • 2 tablespoons lime juice
  • 2 tablespoons sweet chilli sauce ( plus extra to serve)
  • rice paper sheets


  1. Cook noodles according to packet
  2. Thinly chop all vegetables
  3. In a bowl add vegetables, chopped herbs, shredded chicken, cut up noodles, sweet chilli sauce and lime juice
  4. Soak rice paper in water until soft
  5. Transfer onto a tea towel
  6. Place a bit of the mixture towards the top leaving a gap
  7. Fold in sides and then roll up
  8. Serve with more sweet chilli sauce
