Green Curry Paste

I was surprised at how easy it was to make green curry paste and it has so much flavour. It is super easy as well to make. Use 1-2 tablespoons for a mild curry, 3-4 for medium and 5-6 for a hot curry . Freeze any leftovers to use at a later date. Coming soon will be a recipe for a great Thai green curry to use this and I promise it will rival any takeout



  • 1 bunch of coriander roughly chopped
  • 2 stalks of spring onion
  • 1 stalk lemongrass roughly chopped
  • 1 lime ( zest and juice)
  • 1 green chilli cut into pieces
  • 2 tablespoons garlic
  • 2 tablespoons ginger
  • 1 tablespoon ground coriander seeds


  1. Roughly chop all the ingredients
  2. Blend into a paste
  3. Use freshly and freeze the rest for up to 3 months
