Mexican is loved by so many and this nacho dish can easily feed an entire troupe. The mince can be prepared ahead leaving you to catch up with friends whilst it cooks in the oven. Serve with fresh avocado or guacamole



  • 1 packet of corn chips
  • 1 jar of salsa
  • 1 jar tinned tomatoes
  • 1 tin of black beans drained
  • 1 packet taco seasoning
  • 250 g beef mince
  • 1 cup frozen corn
  • tasty cheese grated


  1. Preheat oven to 180 degrees
  2. In a pan brown the meat
  3. Add salsa, tomatoes, corn, beans and taco seasoning to the meat
  4. Stir well and then remove from heat
  5. Place two handfuls of corn chips on the bottom of a large dish
  6. Top with the mince and then dig more corn chips into the mince mixture
  7. Grate cheese over the entire thing
  8. Bake for 15-20 minutes until cheese is golden
