Banana bread

Banana bread is one of my favourite things to bake and I like to think it is a bit healthy?? Maybe … I mainly make banana bread to use up the bananas that have gone a bit overripe. As I know I will eat an entire loaf I like to slice this up, wrap it in cling wrap and place in the freezer where it will keep for 3 months.

Ingredients

  • ripe bananas, mashed
  • eggs
  • 34cups flour
  • 12cups sugar
  • 12cup vegetable oil
  • 14cup milk
  • 1teaspoon baking soda
  • 1teaspoon vanilla

 

  1. Combine the oil, eggs, sugar, milk, vanilla, and mashed bananas.
  2. Add the baking soda and flour.
  3. Combine well for 2-3 minutes.
  4. Pour into a greased loaf pan and bake in a preheated 180 degree  oven for 1 hour and 20 minutes.
