Mac and Cheese

Mac and Cheese is the ultimate comfort food. I always prefer to make mine from scratch but a white sauce is very easy to make. This can be eaten on its own or also as a side dish but it will make enough to feed a family

Ingredients

  • 75g of butter
  • 3 tablespoons plain flour
  • 200 ml of milk
  • 1 1/2 cups of grated cheese ( I used cheddar, gouda and parmesan)
  • 1 tablespoon mustard
  • salt and pepper
  • dried oregano and basil leaves
  • 2 cups of macaroni pasta
  • 1/4 cup breadcrumbs
  • 1/4 extra grated cheese

Method

  1. Put a pot of water on to boil
  2. Preheat oven to 180 degrees
  3. In another small saucepan melt the butter
  4. add in the flour and mix well
  5. slowly add the milk in small batches while stirring  until it becomes a thick smooth white sauce
  6. add cheese, mustard, herb leaves and salt and pepper and stir until smooth
  7. Cook pasta according to directions and drain
  8. Add drained pasta to the sauce and mix through
  9. Pour into an ovenproof dish and top with breadcrumbs and remaining cheese
  10. Bake in the oven for 20 minutes until the cheese on top is browned
