Healthy Pancakes

Pancakes are the perfect weekend breakfast but not always the healthiest option. These pancakes are made of oats, banana and eggs making them healthier yet still just as tasty. I have topped mine with raspberries and almond butter but feel free to use any fruit and spreads you like. This recipe makes around 8 pancakes but you can keep them in the fridge for 2-3 days for a quick breakfast on the run.

Ingredients

  • 1 banana
  • 1 egg
  • 1/2 cup oats
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • oil for the pan

to serve

  • almond butter
  • raspberries

Method

  1. In a blender, combine banana, egg, oats, vanilla and cinnamon until banana is mashed well
  2. Heat a pan and add a teaspoon of oil
  3. Place 1/4 cup of batter into the hot pan to cook
  4. Flip one bubbles appear or the bottom is lightly browned
  5. Cook on the other side for a minute or two
  6. Serve warm with raspberries and almond butter
