Lentil and Vegetable Soup

This soup is perfect in winter to warm you up. It is an incredibly easy recipe and can be made vegetarian by omitting the bacon. The lentils also help to make it a filling meal.


  • 1/3 cup oil
  • 20g butter
  • 1 carrot
  • 1 stick celery
  • 1 onion
  • 1/2 cup red lentils
  • 2 rashers bacon
  • 2 cups vegetable stock

1. Dice bacon, carrot, celery and onion into small pieces
2. Heat oil and butter in a pan
3. Add bacon and vegetables and cook with lid for 10 minutes
4. Add stock and lentils and simmer for 20 minutes
