Sweet potato and bacon frittata

Frittata is such an easy meal to make and really versatile as well. It can also be taken the next day as lunch and can be eaten either hot or cold. You can also easily mix up the ingredients in your frittata to suit your taste


  • 6 eggs
  • 1/2 cup milk
  • 1 medium sweet potato, thinly sliced
  • 1 onion chopped
  • 4 rasher of bacon chopped
  • 1/4 cup cheese grated


  1. Preheat oven to 180 degrees
  2. In a large flat pan , light fry onions, sweet potato and bacon until sweet potato is softened
  3. Whisk eggs and milk until combined
  4. Pour egg mixture over cooked sweet potato and bacon
  5. Top with grated cheese
  6. Bake in the oven for 20-25 minutes or until the middle of the frittata is set
  7. Serve hot or cold

Note: make sure your pan has high sides and can also go in the oven. You don’t want any plastic handles melting off
