Tropical French Toast

Even though it is getting into winter, this topical french toast will remind you of all the summer fruit. French toast is quite easy and can easily be adapted using different bread and topping. I hope you enjoy this topical version as a fancy weekend breakfast


  • 2 brioche rolls
  • 1 egg
  • 75ml milk
  • 1 drop vanilla essence
  • 1 passionfruit pulp
  • 1/2 tin pineapple rounds
  • 1 small banana
  • 2 tablespoons dessicated coconut
  • 20 g butter


  • Preheat oven to 180 degree
  • In a flat dish whisk egg , vanilla and milk until combined
  • Drain pineapple and cut into bite size pieces
  • Heat a pan and melt butter
  • Dunk half a brioche roll in the egg mixture and add to the pan
  • Add some pineapple piece to caramelise slightly in the pan
  • While french toast and pineapple are cooking , put coconut in the oven
  • Watch it very quickly as it will take just over a minute to become toasted
  • Remove coconut from the oven
  • Turn over pine apple and french toast to cook on the other side until golden
  • Serve french toast with pineapple, passionfruit pulp, chopped banana and toasted coconut
