Chickpea Quinoa fritters

I have been out to cafes recently and some sort of chickpea or quinoa pattie with salad has appeared quite often. So I decided to have a crack at making my own and they were actually quite tasty. The recipe makes around 10 patties but they keep in the fridge quite well so you can take them in for an easy lunch. The chickpeas and quinoa are also a great source of protein.


  • 1 can chickpeas
  • 1/2 cup quinoa cooked
  • 1/4 cup red lentils cooked
  • Handful basil leaves chopped
  • 2 tablespoons garlic
  • 1/4 cup breadcrumbs
  • 1 egg


  • Handful spinach
  • Cherry tomatoes chopped
  • Red onion thinly sliced
  • Carrot ribbons


  • 1/4 hummus
  • 1/4 greek yoghurt


  1. Cook the quinoa and lentils for 15 minutes until soft
  2. Mash drained chickpeas, quinoa, lentils, bread crumbs, garlic, basil and egg until just mixed
  3. Heat a pan and then lightly fry handfuls of the mixture to create patties
  4. Cook for around 3 minutes on each side or until lightly browned
  5. For the sauce mix the hummus and greek yoghurt together
  6. Arrange the salad on a plate and then top with a couple of patties and the sauce
