Lime and Ginger Chicken

This is such an easy marinade that is packed full of flavour. It is a not as common as other Asian marinades. This is also a perfect combo to meal prep for work lunches for the week ahead as the cooked chicken will keep in the fridge for 2-3 days.


  • 5 chicken thighs chopped
  • 2 limes zest and juice
  • 2 teaspoons minced ginger
  • 2 teaspoons soy sauce
  • 2 teaspoons honey

To serve

  • rice
  • steamed broccoli/ broccolini


  1. In a bowl combine, lime juice and zest, ginger, honey and soy sauce
  2. Toss the chicken in the marinade and leave covered in the fridge for 8 hours or overnight
  3. Bake chicken in a 180-degree oven for 20 minutes
  4. Serve with rice and steamed broccoli
