Apple Cinnamon Muffins

These muffins are a great way to use up apples that are not looking their finest. These muffins will also freeze for up to 2 months so you can have a quick breakfast or snack waiting in the freezer. You can also add sultanas and coconut to the recipe if you want


  • 3 large apples or 5 small-medium apples
  • 2 tablespoons brown sugar
  • 1 tablespoon cinnamon
  • 2 1/2 cups Self raising flour
  •  1/2 cup brown sugar
  • 300 ml milk
  • 1teaspoon vanilla essence
  • 90 g butter melted
  • 2 eggs
  • 2 tablespoons cinnamon



  1. Preheat the oven to 200 degrees
  2. Peel and cube apples into 1cm pieces
  3. In small saucepan combine apples, cinnamon, brown sugar and 250ml water
  4. Cook on medium heat for 20 mins or until apples are soft
  5. Drain and set aside
  6. In a medium bowl mix sugar and flour
  7. In a jug whisk eggs, add milk and the melted butter
  8. Combine wet ingredients with dry ingredients and apples until just combined
  9. Split the mixture between 12 muffin tins
  10. Bake for 20-25 minutes
  11. Rest for 5 minutes
