Spanish Rice

This is the ultimate one pan dish which is full of flavour. With some pantry staples and flavoursome chorizo, you will get a fully fledged meal with serves of veggies as well. This is an easy mid-week meal which will transport you to the Mediterranean.


  • 4 chorizo sausages sliced
  • 1 onion sliced
  • 1 red capsicum sliced
  • 1/2 cup peas
  • 1 cup spinach
  • 1 can kidney beans
  • 1 tablespoon chilli
  • 1 tablespoon garlic
  • 1 can tinned tomatoes
  • 1 cup of rice
  • 1 1/2 cups of vegetable stock


  1. In a large pan, fry the chorizo until cooked through
  2. Add onion, capsicum chilli and garlic and lightly fry for 2 minutes
  3. Add beans, tinned tomatoes, rice and vegetable
  4. Simmer for 20-25 minutes until rice is nearly cooked
  5. Add peas and rice and increase to medium heat until the liquid is greatly reduced
