Middle Eastern Dip with the lot

This is an amazing dish to entertain with or for the family. It is basically a loaded dip with delicious marinated chicken veggies and chickpeas. Any leftovers are also really nice cold the next day. In the version I made, I didn’t include sweet potato or spinach but through they would be great added to the dish. Use the pita bread and enjoy this loaded flavoursome dip.

Ingredients

  • 1 tub of hummus
  • 1 can of chickpeas
  • 1 chicken breast
  • 1 zucchini
  • handful of cherry tomatoes
  • 1/4 red onion
  • Coriander leaves
  • Packet of pita bread

Spice Rub

  • 1 tablespoon minced garlic
  • 1 tablespoon finley chopped coriander
  • 1 Tbsp ground cumin
  • 1 tsp ground cayenne pepper
  • 2 tsp smoked paprika
  • 2 tsp salt
  • Black pepper
  • 2 Tbsp lemon juice
  • 3 Tbsp olive oil

Optional

  • Spinach leaves
  • Sweet potato

Method

  1. Combine all spices in a bowl and stir until well combined. Remove a spoonful of the mix for later
  2. Thinly slice the chicken and then add to the spice mix. Leave cover in the fridge for 4 hours or overnight
  3. Preheat oven to 180 degrees
  4. Coat drained chickpeas in remaining spice mix and spread out on a tray
  5. Cook Chicken and chickpeas in the oven for 20-25 minutes
  6. ON another tray thinly slice zucchini and sweet potato if you are using. Drizzle with olive oil salt and pepper
  7. Cook Zucchini and sweet potato for 20 minutes
  8. Thinly slice red onion and tomatoes. Cut pita bread into triangles
  9. ON a long flat dish spread hummus to make the base
  10. Remove everything from the oven and place the pita bread in the oven to warm
  11. Assemble chicken, chickpeas, vegetable on top of the hummus. Top with red onion slices and a few coriander leaves
  12. Remove bread from oven and serve immediately
