Asian Noodle Salad

This is such a fresh dinner that is perfect on a hot summers night. It is a really healthy dish that will fill you up and can be eaten for lunch the next day. I love all the colours of the vegetables and herbs in this dish. Feel free to adjust the amount of chilli to your liking.


  • 1 Carrot grated
  • Red cabbage
  • Capsicum
  • Snowpeas
  • 1 packet vermicelli noodles
  • Handful of coriander leaves
  • Handful of mint leaves
  • 1 chicken breast

Marinade + sauce

  • juice of one lime
  • 2 tablespoons of honey
  • 1 tablespoon minced ginger
  • 1 teaspoon of chilli
  • 1 teaspoon soy sauce


  1. Bring water to the boil
  2. Cook noodles and snow peas for 2-3 minutes until noodles are soft. Drain and set aside
  3. Mix all ingredients for the marinade together – put two tablespoons aside
  4. add sliced chicken to marinade and then pour all into a hot pan
  5. Cook chicken until browned on the outside
  6. Combine cooked chicken, thinly sliced vegetables, herbs, and noodles in a large bowl
  7. Mix thoroughly with extra sauce and serve with a lime wedge and extra herbs
